Support Officer and Short Course Trainer
Carolina, whose preferred name is Caro, has had the privilege of calling Australia home for the past six and a half years, but with roots that trace back to Colombia.
During this time, Carolina has been engaged in an Administrative role with Lonsdale Institute for the past seven months, refining her organisational and communication skills.
Caro holds a degree in Hospitality from her home country and has also achieved an Advanced Diploma in Business here in Australia. She recently joined the High Season Team as a Student Services Officer and looks forward to providing support and engaging with you all.
Course Benefits
This course will cover the importance of food safety, serving and storing food, dealing with dangerous foods, personal hygiene, safety requirements for commercial food operations and pest control. Australian Food Safety Standards require any food handlers to obtain this qualification.
Legal compliance
Gain an understanding of the responsibility of serving food in just about every Melbourne food or beverage establishment. From cleaning to food contamination, you'll be well-prepped before you set foot near a commercial kitchen.
Risk reduction
By learning the correct food procedures, you’ll minimise the risk of food contamination or food-related injuries. Salmonella from undercooked chicken, forget about it!
Reduce your food waste
A big tick from Greta Thunberg on this one, as good food handling and learning how to store foods properly ensure minimal wastage. Not only is correctly storing food eco-friendly, but it also cuts costs and prep time.

Coming to Australia and studying at Lonsdale Institute - High Season has been an amazing experience for me. I learned about the culture and how working in Australia differs from the Philippines, where I am from, or in the US, where I have worked previously.
But studying here has helped me become knowledgeable and ready for work. I used only serving and clearing plates, but with coffee making as part of the course, I am now one of the main baristas at Park Hyatt Melbourne, where I have worked for two years.
As I continued studying, I also learned a lot about different types of Australian wines, gin, beer, and spirits, which are essential in the industry.
The way I interact with guests has improved, as has my service. These are just some of the things I have learned while studying. Simply put, High Season, led by Cate, has made it easy for me to learn and adapt here in Australia.
I will always recommend High Season because I would like others to experience the hospitality industry here in Australia, not just by the books but through face-to-face interactions with restaurant owners, managers, and staff or the different activities/experiences they provide for their students.

Thinking of my time at High Season, the course has been instrumental in creating and shaping my journey within the hospitality industry.
Although I had no prior base or knowledge of the industry, I owe much of my achievements to the understanding, skills, experience, and, of course, lots of patience I gained during my time at High Season.
The course gave me a comprehensive understanding of the fundamental principles of hospitality and equipped me with practical skills essential for any job in this field.
The practical experience and industry insights shared by many experienced instructors I met during our excursions were invaluable.
Through different practical sessions, including my first jobs in this field, I gained a deeper knowledge of the flow of the hospitality business and learned how to affront challenges effectively.
Overall, it was the perfect combination of knowledge and practical application that helped me confidently pursue opportunities within the hospitality industry. Today, I've experienced many of the things that I used to see as a spectator, and I am excited to continue growing and having more experiences.
And if you're looking for a very simple sentence, I'd say... I learned how to work in a team environment and delegate tasks to achieve a goal.

Restaurant Manager
I started with no knowledge of the industry, but the Hospitality Management Diploma gave me all the tools I needed to be a professional restaurant manager. You learn all the foundations - bar service, food service, and an in-depth understanding of coffee.
As I worked in the industry while studying, I shifted my focus to leading my team, managing customer complaints, and understanding the venue's costs.
I started as a runner and was promoted to restaurant manager within three years of working. When you are passionate and curious about your job, it’s easy to follow this course as everything is well organised, and you meet hospitality and events veterans giving the keys to the new generation.
The main advantage of this course is the excursions as you meet professionals in the industry and discover venues, wineries, and breweries.
Thank you to the team for all your dedication to helping us become future professionals.
